This recipe is always a success in my house. I try to use only ingredients that are as fresh as possible. I usually make this gluten free but you can also make it Paleo.
Servings: 4-6 people
Ingredients:
You can make this beef in a brisket slow cooked or pressure.
1.5 – 2 kg / 3 – 4 lb beef brisket
1 tbsp olive oil
2 tbsp of honey (or more if you like it sweeter)
2 tsp smoked paprika powder
1 large onion cut into 4 pieces
2 garlic cloves
150 grams of sundried tomatoes
1 tsp salt
1/2 tsp black pepper
One carrot pealed and cut in two
2 bay leaves
2 cups of water
1 tsp Tamari sauce for a gluten free diet. (For paleo use coconut aminos) If you do not follow any of those diets regular soy sauce will be fine.
Instructions:
1.In a saucepan, sear the brisket until it gets a golden color. Please don’t overcook the brisket. This step is just to give some color to the meat.
2.Mix all the ingredients with the brisket and place it in the pressure cooker or slow cooker.
3.Add enough water according to the size of the cooker that you will use.
4.Slow cook in a slow cooker for 8 to 10 hours (1.5 kg / 3 lb) or in a pressure cooker for 1 hour and 15 minutes for (1.5 kg / 3 lb).
5.Place the brisket onto a cutter and slice it.
6.Pour the sauce of the brisket into a saucepan to reduce it for more flavor and thickness.

How to serve the brisket: My kids love this in a sandwich or with nice mash potatoes and a fresh salad. For a Gluten free option, arepas are fantastic. Arepas are a corn base type of bread from some countries in South America, like Colombia and Venezuela. Since I started my gluten free diet Arepas have been introduced to my regular menu.
