Cornstarch Cookies with Caramel Filling
(Alfajores with Dulce de Leche)

Ingredients
1 3⁄4 cups cornstarch
1⁄2 cup sugar
1⁄2 cup gluten free all-purpose flour
10 tablespoons unsalted butter
1 teaspoon baking powder
1⁄2 teaspoon vanilla extract
4 egg yolks
1 can of dulce de leche
Shredded desiccated coconut
Directions
1.Mix the butter with the sugar and add the vanilla.
2.After whipping the eggs, mix with the butter and sugar mix.
3.Add the cornstarch, the gluten free flour and baking powder to the previous mix until forming a smooth dough.
4.Keep the dough refrigerated for 30 minutes.
5.Roll the dough to a thickness of 1/4 inch.
6.Cut out 2 inches diameter circles.
7. Bake them at 350 degrees for 15 minutes. Do not let them turn brown.
8.Let them cool and spread dulce de leche in the middle as a sandwich.
9.Roll over the borders on a plate of shredded desiccated coconut.
